Breakfast in a Jar

One of my favorite things about having the day off from work other than having extra time with my children is getting to watch the TODAY show. No joke, I'm obsessed. If you watch you know that Natalie Morales is in amazing shape and takes very good care of herself. She shared one of her clean eating secrets which takes no more than two minutes of your time! Behold, breakfast in a jar. Simply cut up avocado and tomatoes. Add some lime juice, salt and pepper to taste. You could do this the night before and store in an air tight container in the fridge. If you decide to do so, keep the pit of the avocado in the container too. It keeps the avocado from browning. In the morning, crack two eggs into a mason jar and add a splash of milk. I also add a dash of salt and pepper. Microwave for about thirty seconds at a time stirring occasionally. Add the avocado and tomato mixture once the eggs are done cooking making sure to stir the contents of the jar around. The eggs will be warm enough to take the chill out of the avocado and tomatoes. Either cover with a lid and bring it with you to work or enjoy while getting ready!
